Using my left overs from the night before and turning them into some kind of breakfast has always been a favorite of mine. Last night I made shrimp fajitas, so naturally, I used the beans, fajita veggies and shrimp to make a delightful breakfast.
- spot prawns or shrimp
- fajita seasoning
- bell pepper
- refried beans or subsitute
Whisked eggs and cooked on medium low until cooked almost all the way through. Reheated the beans and other fajita filling from last night. Once the eggs were cooked enough, I put the beans on first, then the veggies and topped with shrimp last. For my boyfriend, I added some pepper jack cheese on his side. On mine I did not. Folded the egg over and bam. Omlette.
Instead of sour creme, use plain greek yogurt and throw in some fresh salsa too.
