Todos Deliciosos Mexican Breakfast Skillet - 23P, 12F, 31C

Sometimes I want to feel like I woke up in my favorite place in Mexico, so I bust out some beans, salsa, eggs and the CUMIN!

Ingredients:

  • Cumin to taste
  • garlic and onion diced
  • spinach
  • onions
  • black beans (canned) 
  • avocado
  • salsa
  • eggs
  • coconut oil

Add tablespoon or less of coconut oil to pan and heat. Saute garlic, onions, mushrooms until soft and add black beans. Stir in the greens for the last few minutes of cooking as they wilt and mix in pretty quick. Mix in cumin to your preferred taste....I rarely measure things so start with a little and add as you taste it. Poach your eggs for the healthiest option or fry them in more oil, but keep in mind the more you fry the more fat calories you add.  

Pro-tip : For the best poached egg, add a splash of vinegar to the water.  Crack your egg into a bowl.  Once the water is boiling, stir the water in a circular motion to create a vortex, then poor the egg in one at a time.
