Goat Cheese and Asparagus Stuffed Chicken
It really does not get much easier than this!
garlic herb goat cheese, one oz per chicken breast
asparagus, as many as you want in the chicken
bread crumbs (optional)
shallots and garlic (optional extra)
Preheat the oven to 375*. Line a baking pan with parchment paper.
Slice the chicken breast down the middle and butterfly it open. Use one serving of goat cheese per chicken breast. Add the spears of asparagus with the ends chopped off. I like to add a little more zip so i sauteed some extra shallots and garlic and added it in to the middle also. Up to you!
Coat the chicken breast with bread crumbs if desired.
Heat the avocado oil in pan and sear chicken until lightly browned on both sides.
Bake for about 25 minutes or until internal temperature reaches 165* . I plated with a salad and drizzled balsamic glaze on top. Use your best judgement for what you would like to add. Cheers!
