Ham, Spinach and Hash Brown Breakfast Fritata 28g protein, 18g carb, 16g fat.

Bust out that old cast iron skillet if you have one. If not, a glass baking pan will do! Preheat the oven to 375*

3 servings -

  • 6 eggs beaten

  • 9 oz ham

  • 2 cups Obriens hash browns

  • a couple handfuls of spinach

  • 1/2 tbsp avocado oil

I haven’t been tracking macro’s lately but out of curiosity I did on this one, good to know how it performs!

Heat oil in cast iron skillet and add the hash browns. Cook most of the way through stirring occasionally.

Add the ham and combine.

Cook for a few more minutes and add the spinach.

It looks like a lot but don’t worry it cooks down considerably.

While this is cooking, beat the eggs in a separate bowl. Add salt, pepper and any season combos you like. I usually add a dash of Spike.

Pour eggs over the mixture and mix until eggs are even throughout.

Once oven is heated to 375 stick the pan in the oven. I baked mine for about 25 minutes but keep an eye as different pans and ovens do different things. This recipe yielded 3 large servings. Double or triple it by cooking in a large glass baking pan to prep breakfast for the whole family for the week.
