Sweet potato porridge - breakfast or dessert!


Delicious alternative to oatmeal and/or for a sweet and filling snack!

  • Two medium sweet potatoes

  • 1 cup raisins

  • 1/4 cup craisins

  • 1.5 can coconut milk reduced fat

  • optional - cinnamon, nutmeg, vanilla extract

Peal sweet potatoes and chop finely using a food processor. Or a lot of elbow grease :)

Add to pan and add the coconut milk until just covering the sweet potatoes. Bring to a simmer and let it do its thing.

Cooking time varies on how much you use but I typically find about 20 minutes…. about half way through I added cinnamon, nutmeg and a teaspoon of vanilla extract.

At the same time I also added the raisins and craisins to give time to melt the flavors and re-hydrate the raisins. Stir in and cook until the sweet potatoes are soft and raisins are plump. Eat hot or cold! Usually makes four servings :) Enjoy!
